CHICKEN ENCHILADAS!!!!!!!!!!!!!!
GRAB YOU WALLET AND CAR KEYS AND GET TO YOUR NEAREST GROCERY STORE, BECAUSE YOU WILL WANT TO MAKE THIS. IT IS ABSOLUTELY FANTASTIC!!!
YEA, I KNOW IT AIN'T MAY 5TH, BUT HEY I CAN'T GET THE WORDS TO LEAVE, LOL. SO JUST PRETEND THEIR SAYING, MUCHO BUENO. OK HERE GOES:
2cups chopped cooked chicken or turkey
1cup chopped green bell pepper
1 package 8oz Philadelphia Lite Cream cheese
1 8oz jar of Salsa
8 (6-inch) flour Tortilla's
3/4 pound (12oz) Velveeta Cheese (cut up)
1/4cup 2% milk
1) Stir chicken, bell pepper, cream cheese, and half cup salsa in saucepan on low heat until cream cheese is melted.
2) Spoon 1/3cup mixture down center of each tortilla; and roll up. Place seam down in lightly greased 12X8-inch baking dish.
3) Stir velveeta cheese and milk in saucepan over low heat until smooth. Pour sauce over tortillas, cover with foil.
4) bake at 350* for 20 minutes. Remove from oven, remove foil and pour remaining salsa over tortillas. Serve immediately.
Makes 4 to 6 servings.
