Beings one of the things we're gonna do on our vacation is go crabbing, I thought I'd dig out my recipe for Crabcakes. The only time I ever make them is when we go crabbing and catch our own, cause there so much better tasting with fresh crabmeat. So, here goes the recipe:
3cups saltine cracker crumbs 2large eggs, lightly beaten 1/2cup diced onion
1/2cup diced celery 3cups cooked mashed potato's (do not add milk or butter)
1teaspoon black pepper 1/4 teaspoon paprika 1pound crabmeat vegetable oil
Stir together 2cups cracker crumbs, potatoes, crabmeat, onion, celery, eggs and seasonings. Shape into 3inch patties. Dip in remaining cracker crumbs. In large skillet heat 6 tablespoons oil on medium heat. Add crabcakes, cook about 4 minutes on each side or until goldren brown. Add more oil if needed.
Lay out on bed of salad greens, add lemon wedges. Enjoy!!!!!!!!!!!
My hubby loves these!!!! I serve them with coleslaw and potato or macaronni salad.

So she went there and got some. And I'm also laughing because my daughter went crabbing today, but didn't get anything. So they're going again tomorrow. ReplyDeleteFeel free to email me if you like. My husband had Non-Hodgkin's Lymphoma and is now in remission for about 7 years. Then he got bone marrow cancer (MDS going into AML) but he no longer has it b/c he had a bone marrow (stem cell) transplant. The bone marrow cancer is gone, but he is still having complications from the transplant. That often happens for awhile after a transplant. Anyway, if you would like to email, please feel free, I have a lot of cancer survivor friends.
