As I was looking through some pamplet's my doctor gave me, I found a recipe for a pasta salad, that is said to be low in calories and low in cholesterol. And you don't even need a meat to go with it. Just eat the pasta salad alone cause it's full of veggies. I am going to try it myself, it looks really good. Ok, so here it is:
3 cups uncooked vegetable pasta, (you know the multi colored ones)
2Tbl lemon juice 1/2cup Olive oil 1/4tsp black pepper
1/4tsp Oregano 1Lg clove garlic, crushed and minced
2 cucumbers peeled and diced small 8 radishes sliced thin
1/4cup chopped scallions or diced red onion 1/2cup diced green bellpepper
1/2cup diced red bellpepper 4plum tomatoes diced (remove seeds)
1/4cup shredded carrot 1cup fresh chopped brocolli
2Tbl fresh chopped fine parsley 1/4cup thinly sliced celery
In a mixing jar add lemon juice, olive oil, oregano, parsley, black pepper, shake well and refrigerate til ready to use. Cook pasta until desired tenderness, drain rinse with cool water and and let sit 15 minutes to cool thoroughly. When pasta is cool pour into large mixing bowl, add the veggies and mix well. Pour in the dressing right before serving.
Ok, there it is folks. If you try it let me know what you think. Some of the quotes on the pamplet say, it's full of flavor and wakes up your taste buds, letting you know that you ate, therefore giving you the full feeling. Af few other comments were, they did'nt need to make anything else to go along with the pasta salad, that it was filling enough. Hey that works for me, lol.ENJOY!!!!!!!!!!!!!!
